Did you already see Building the Ultimate vSphere Lab? This describes how to build a virtual lab including an iSCSI target. If you don't want to use a dedicated iSCSI target/VM, you can find a couple of vendors who provide an evaluation copy for free. I'm currently using the HP VSA in my lab.
